(15,611 posts)Hopefully you are getting better after your tumble, this morning leftover baked blueberry oatmeal coffee at the moment.
Dry brown rocks and green beans for Dunc he enjoys canned green beans no salt.
Yesterday making tacos the furry brat stole a bag of shredded cheese off the counter and disappeared . We were like didnt we get the cheese out Im positive i put it on the kitchen bar.
And the result was terrible Dunc gas all evening as we cuddled napped watching football.

(42,522 posts)With my egg bites. I was getting out ingredients to make them and realized there was no way I was going to crack enough eggs for the 1 2/3 cup of whites the recipe wanted. I wasn't even willing to do half that. I'd rather buy the whites in a carton, so I'll do that next time I go to the store.
So instead I toasted a banana nut muffin, added crystallized ginger to cottage cheese, put blueberries over the top, and added tangelo slices on the side. Quite a delicious breakfast; I was happy with it.
Decaf coffee with half 'n half.

(1,662 posts)Even if you arent vegan, you can use these to replace eggs. I like the Ener-G brand but even ground flax seed works welland aquafaba (the liquid from a can of garbanzos or other beans works *really* well for egg whites. Even the liquid from black beans whips up white. Might be a good thing to keep on hand for emergencies.

Heres what 1 can of aquafaba looks like when you whip itthis is maybe 1/3 c of liquid. The only caveat is that any trace of oil will make it deflate, which doesnt matter if youre only using a couple tablespoons in a dish like this. (I learned the hard way that peppermint *oil* can ruin xmas meringues in a second, so always use *extracts* instead.)

(42,522 posts)Who would ever guess aquafaba would look like that!

(1,662 posts)I like to use the peppermint *extract* for these, and maybe dust with cocoa powder just to mix it up. I use a small ice cream scoop to keep them uniform. You can bake at a low temp in the oven but I use my dehydrator overnight and they turn out perfect every time.
Makes a great pavlova, too! Just make big pancakes of them and assemble by layering with fruit just before serving.

(Yes, I give myself demerits for the egg pun.
