What's for Dinner, Sat., Feb. 7, 2026

Stuffed pepper filled with Beyond sausage, chopped onions, garlic, corn, tri-color couscous, and celery. Topped with Swiss cheese.

If you read my post yesterday, I started the peppers Friday. I only had one of them last night, and I have some left, plus enough peppers and stuffing to make many more. They turned out to be quite delicious, and I didn't even use a recipe!

Tossed ruffly green and spinach salad with French dressing.

Kombucha: pineapple.

Dessert: A friend gave me a "brown butter" chocolate chip cookie. It is big! It's about 8" in diameter!

sometimes I plan the menu and don't even go there from exhaustion...
lol...I am sure you did.
But I have posted a menu b4 and just couldn't. Your choice sounded like lots of work...

Squeeze frezh lemon juice over tge roast & sprinkle with Ital seasoning mix (Aldi) & chop a bit of onion over breast.

Pop in oven & wa-la dinner. Lol

Best recipe ever! Modification of herbs de provence recipe online. Minus the orange.

Classic chicken Marsala served with garlic mashed potatoes and French style green beans.

We spent the afternoon pre-making food for tomorrow’s Super Bowl party. The chili is done and the pizza dough is ready to go.

Nachos with grilled steak, topped with beans, guacamole, fresh onion, tomato & pickled jalapenos & four corn quesadillas. I was stuffed.

Waiting for a big batch of chickwheat to finish in the Instant Pot, and I suspect the first batch is going to become wraps as I’ve got WW tortillas to use up and a fresh bottle of jalapeño sauce.

Should get at least five more meals out of this, and it embarrasses me to think of how lazy I’ve gotten as I’ve relied on Gardein ready-made stuff when this is so cheap, easy to make my own, and a much better product in the end… It’s basically like shredded chicken breast only… vegan.

Steam-fried in evoo and veggie broth: chopped onion, yellow bell pepper, cauliflower florets, sliced mushrooms, minced ginger and garlic. When done I added chickpeas and a slurry of Patak’s curry paste and vegetable broth. Served with brown basmati rice and cucumber salad. Cheers!🥂
